My Andre brought home the prettiest dragon fruit from our local grocery store the other day and of course the first thing that went through my mind was, Unicorn Juice!

I was very pleasantly surprised by how the smoothie turned out – in taste and appearance. Dragon fruit, also known as ‘strawberry pear’, taste like a delightful blend of pear, watermelon, and kiwi. The fruit’s colour ranges from a rich pink peel with white flesh (studded with tiny black seeds, similar to kiwifruit), or yellow peel with pink flesh. It’s deliciously refreshing and super healthy.

Dragon fruit is considered a tropical superfood as it offers a surprising number of nutrients, including Vitamin C, calcium, fiber, lycopene (which helps in lowering the risk of cancer, hypertension, and heart disease) and it’s rich in antioxidants.

The interesting thing about dragon fruit is that it’s produced from a fruit-bearing species of cacti which blooms once, at night. Magical!

Dragon fruit has watery flesh, so I opted for a creamier base this time around and used fat free plain yoghurt. I added a tablespoon each of honey, lemon, and coconut, but you can increase or decrease these amounts to taste. This is quite a large serving, so be sure to share!

  1. Prep the dragonfruit by slicing it in half and scooping out the soft flesh.
  2. Place all ingredients in a blender.
  3. Blend until smooth.
  4. Enjoy!
